A pressure driven precooling plant was set up for Clementine fruit (Citrus reticulata) to control fruit temperature for cold treatment; the water loss reduction during the long term storage; the application of a micro controlled atmosphere on each pallet. The results have been used to project and build a standalone device that allows the recording and on-line control of thermo-hygrometric parameters, air flow, undesired volatile compounds reduction, and ozone dosage in the cold storage room.
