Volatile organic compounds (VOCs)of 9 Tuber species and 2 forms were identified via solid-phase microextraction-gas chromatography-mass spectrometry analysis. Seventy-five VOCs were recognized. The most abundant resulted dimethylsulphide, 2- and 3-methylbutanal, 2-methylpropanol, and butanone.
