Grape, which is largely consumed, is a one of the highest source of polyphenols; grape contains four main classes of polyphenols: flavonols, anthocyanins, flavan-3-ols and their polymeric forms (tannins) [2]. Anthocyanins, whose profile is characteristic for each variety, contribute to the taxonomic identification of grape and their antioxidant activity is higher than ascorbic acid. In this contribution we evaluated the differences in the anthocyanin profile in several grape variety all from western Sicily through a fast and accurate quali/quantitative method was developed, through a UHPLC-DAD-MS-IT-TOF, combining the simplicity of DAD detector for quantification and the mass accuracy and unambiguous identification of Ion Trap-Time of Flight mass spectrometry for qualitative profiling of grape varieties.
