ABSTRACT – Acceptability of milk obtained from jennies reared in Basilicata The trial was carried out on jenny milk obtained from a semi-extensive rearing of Basilicata region. The average content of protein, fat, and lactose resulted, 13.78, 2.10, and 62.11 g/l, respectively. The test involved two groups of habitual cow milk consumers: 1) with jenny milk tasting experience; 2) without jenny milk tasting experience. Consumers evaluated the intensity of some sensory attributes (sweet, sour, flavour, taste, colour) and the “overall acceptability” of the product utilizing 1 to 10 scale interval. Sweet, flavor, and taste were evaluated with a score over the middle point of the evaluation scale (>5). Overall acceptability of jenny milk resulted 7.3 and 6.4 in group 1 and in group 2, respectively.
